I'm looking into Kubota Diesel Generators. I have read in many places that Kubota diesels are the gold standard. So I'm not worried about that. How dependable are they? How much overload can they handle? I don't want to ruin it when my AC kicks in and creates a "spike".

Depends on how much current your AC draws but I'd not be worried. It will draw down for a moment but the generator will compensate. Kubotas can take a lot of "load spiking". Is your AC a 120 or a 240? The generator has a "continuous load" rating that you can ask your AC guy about, and see if the spike will exceed that.
